Turkish Borek with Feta

Ingredients: 2 eggs; 150 ml olive oil, plus extra for greasing and topping; 75 ml greek yoghurt; 75 ml whole milk; 3 large yufka dough; Nigella seeds or sesame seeds, to sprinkle; 175 g The Three Cows White Cheese Creamy, crumbled; 75 g cheddar, shredded; 15 g leaves of flat-leaf parsley, roughly chopped

The Börek is a delicious layered pastry made from filo pastry and a filling. The most common filling is with cheese. Börek is easy to make at home. It’s also a popular snack on the go, as cafes specializing in Börek are found around the world.

Instructions

- 1. Preheat the oven to 200°C.
- 2. Whisk egg and olive oil, then yoghurt and whole milk until smooth. Set aside. Mix the cheeses and set aside.
- 3. Grease and place one sheet of yufka in the oven tray.
- 4. Spread the egg mixture on the yufka.
- 5. Tear the second sheet of yufka, and the excess cut off into large pieces. Dip each piece into the egg mixture and layer it in a wave like manner. Scatter the cheese mixture and top with flat leaf parsley.
- 6. Tear the third sheet of yufka into large pieces, keeping a rectangular piece separate. Dip the pieces into the egg mixture and layer them too.
- 7. Place the rectangular piece of yufka on top, then fold in the sides.
- 8. Sprinkle with nigella or sesame seeds.
- 9. Bake until golden on top and cooked through in 30-40 minutes. Leave to cool, then enjoy.
