Ingredients: 2 tbsp extra-virgin olive oil; 3 tbsp lime juice; ½ garlic clove, minced; ¼ tsp sea salt; 5 cups watermelons, cubed; 1 cup English cucumbers, diced; ¼ cup red onions, thinly sliced; ⅓ cup The Three Cows White Cheese Full Fat, crumbled; 1 avocado, cubed; ⅓ cup mint or basil leaves, torn; ½ green jalapeño or serrano pepper, thinly sliced (optional); sea salt, to taste
