Cheesy Chicken Mushroom Potato Casserole

• • 1. Boil the potatoes on medium heat for 15-20 min and mash them once they cool down.
  • 2. Season the chicken with salt and pepper, garlic powder, ginger and soy sauce.
  • 3. Heat a pan on medium heat, add some oil and sear the chicken till it Is golden. Remove from the pan and set aside.
  • 4. In the same pan sauté the onions and garlic until they turn glassy and aromatic.
  • 5. Add the mushrooms and cook for a minute.
  • 6. Add the broccoli, stir and cook for 5 minutes.
  • 7. Add the chicken stock, thyme and season to taste.
  • 8. Add the chicken back to the pan and give the ingredients a stir for 5 min.
  • 9. Add the corn starch mixture and mix well until the sauce thickens.
  • 10. Mash the potatoes, add butter and milk and season with salt and pepper.
  • 11. Mix well and shape into balls.
  • 12. Pour the chicken mixture in a casserole dish.
  • 13. Place the potato balls over it to cover the top completely.
  • 14. Add The Three Cows Mozzarella cheese on top and bake in preheated oven at 200°C till the cheese is melted and golden.
  • 15. Serve warm.
